Cooking/baking-1st video

If you want to follow along with this easy, budget friendly cookie/bar, gather the following:


Oatmeal Banana Fruit Cookie Bars

2 cups 1 minute/quick oats

1 cup of liquid-coconut milk, soy milk, maybe juice?

1 banana

1 cup of chopped fruit - I used chopped apple for this


1 muffin tin for 12

cooking oil spray - I used coconut oil spray

small ladle to mix, smash and measure


Directions:

PREHEAT OVEN TO 350 degrees.

1. Mix all the ingredients together

2. Spray the muffin tin w/ cooking oil spray

3. Measure and fill the muffin tins-this recipe should make 12, more or less.

4. Pop in the oven for 20-30 mins.


Not sure why there is always a variation in cooking times. However, I like them to get a little browned on the bottom. Differences in milk, banana and fruit ripeness changes texture. Also, if you like a more blended bar, mash banana more and/or add a little more liquid. I've made these with banana and oats only, too! Experiment!
